Meet Your Meat!
When choosing a steak at the grocery store you need to know what you are looking for or you may end up with a steak that you do not really want. Some things to consider are:
- Price
- Cooking style
- Fat content: USDA Prime (contains the most intramuscular fat/marbling), USDA Choice (less marbling than prime), select (less fat than prime and choice). Remember fat=flavor
What cuts are considered extra-lean?
- Sirloin tip side steak
- Top sirloin steak
- Bottom round steak
- Top round steak
- Eye of round steak
