Education: A
Multicultural Perspective
Nutrition
Education: A Multicultural Perspective focuses on
nutrition
education as a health promotion tool. The
goal of health promotion
is to
improve health and to delay diseases, disability, and
death. The text stresses the importance
of cultural competence, working
successfully
with diverse populations, analyzing
social and cultural determinants of eating patterns and behaviors, and
identifying
appropriate
methods of communication. Nutrition
Education:
A Multicultural Perspective uniquely bridges
the gaps between nutrition
science,
health education
theory, and nutrition education principles.
Nutrition and Well-being: A-Z
Nutrition and Well-being: A-Z is a two-volume encyclopedia
that examines
the relationship between food and health on a
historical, national and personal
level. It analyzes how nutrition has affected quality of life, health
and
fitness in various countries
at different times in history. Historical as well
as contemporary methods of treatment are presented from an
international
viewpoint. Dietary trends within various
cultures are also covered, ranging from the consumption habits of
Asian-Americans to
those of Central Europe to
those customary of Pacific Islanders. The
set is rich in biographies of influential figures in the fields
of nutrition
and medicine such as McDonald's founder Ray Kroc; Sylvester Graham, the
creator
of the now-famous Graham
cracker; and William Stark, a pioneer in early
research into balanced diets. Profiles of major organizations such as
UNICEF,
the National Academy of Sciences, and the World Health Organization
complete
this world guide to health and nutrition.
Reviews:
"Prepared
for students and the general public, this two-volume reference presents
fundamental, starting-point information on
various aspects of nutrition -- the
type of information covered in general nutrition foundation courses."
--SciTech Book News (September 2004)
"A
solid accessible resource for upper grades and adults."
--Library Media Collection, March 2005
"A
no-nonsense, comprehensive encyclopedia
that will be of use to students researching health and food-science
topics...The
food pyramid is clearly explained and food labels are deciphered
line by line...A global perspective is maintained throughout the
work, with
articles provided on the diets of geographic and ethnic groups
worldwide…Nutrition’s straight forward coverage
offers
more information on disease and government oversight."
--School Library Journal (October 2004)
"The
writing level is suitable for high
school readers and up, and the sidebar glossaries of terms highlighted
in the
essays add to
the volumes'
usefulness for students. A helpful topical outline
organizes the entries by category, and the entries include cross-
references
where applicable. There are also handy charts, such as the USDA Food
Guide
Pyramid...This is an excellent choice for
smaller
public and college
collections that can't afford the Human
Nutrition set and a good addition for a large library looking to
build
its consumer health reference collection."

Temple Project
Keepers of the
Temple is a
spiritually
based health and wellness book for ethnically diverse teen. It addresses issues from body
image to body
odor, feelings to fitness, hormones to healthy eating, spirituality to
sexuality, and everything else in between. It
provides information and advice that kids really want to hear and
really can use. A $12,000 grant from the
Florida Department of Health
was used to develop and test the concept for Keepers
of the Temple. Focus groups were
conducted with six groups
of young adults to
receive input on content, layout, and learning activities.
