History

Puerto Rican food, like its culture, has a rich history. Puerto Rican cooking, or Cocina Criolla as it is often referred to, is a combination of African, Spanish and Puerto Rico's native indians, the Tainos. The cuisine has evolved over the centuries, starting with native tropical fruits and seafood and then expanding when the Spanish brought meats such as pork and beef along with olive oil, rice and wheat to Puerto Rico. African influence can be found in the method used to cook food often in Puerto Rico: frying.
