Tembleque: Coconut Custard
What you will Need:
- four cups coconut milk
- one half cup corn starch
- two thirds cup sugar
- one half teaspoon salt
- one tablespoon orange blossom water
To Make Tembleque:
- Dissolve the cornstarch in one cup of the coconut milk in a saucepan with a whisk over moderate
to high heat. Add the remaining coconut milk.
- Add sugar, salt and orange blossom water.
- Cook over moderate to high heat, stirring constantly with a wooden spoon. When it boils, reduce
the heat and cook until it begins to thicken.
- As soon as it begins to thicken, remove from heat and pour into a glass or aluminum dish or pan
that has been rinsed with cold water.
- Cool thoroughly in the fridge. Once tembleque is cool, remove from pan by either flipping over onto a serving dish or serving
with a spoon.
