I first tried this recipe at my best friends wedding in Virginia. She was marrying a sweet boy also from The Mother State, whose father made their wedding cake. Yummy, chocolately, moist Red Velvet Cake. It was probably one of the best homemade cakes I've ever had in my life. And of course, being the nice Southern gentleman that he is, he gave me the recipe.

First, make sure to get all of your ingredients together. Nothings worse than realizing mid-mix that you're missing an ingredient. If you're families as nice as mine, they laugh at you for a solid five-minutes before they run to the store for a ¼ cup of butter.

When mixing the cocoa and the food coloring be very careful. If you don't wear gloves your hands will probably look like this. And don't forget an apron! Not enough soap in the world can help you, just time.

Batter

  • 2 ¼ Cups All Purpose Flour, sifted
  • 1 Teaspoon Salt
  • 2 Tablespoons Cocoa Powder
  • 2 - 1 oz. Bottles of Red Food Coloring
  • ½ Cup of Butter, softened
  • 1 ½ Cups of Sugar
  • 2 Large Eggs
  • 1 Cup Buttermilk
  • 1 Teaspoon Vanilla
  • 1 Teaspoon White Vinegar
  • 1 Teaspoon Baking Soda

Frosting

  • 1 - 8 oz. Package Cream Cheese, softened
  • ½ Cup Butter, melted
  • 1 Teaspoon Vanilla
  • 3 Cups Powdered Sugar
  • 1 Tablespoon Milk

Preheat the oven to 350°. Combine the sifted flour and salt, and set aside. Put the coca in a small bowl, adding the food coloring gradually, stirring the mixture until smooth. Set aside.

Cream together the butter and sugar, beating for 4 or 5 minutes at medium speed in an electric blender until fluffy. Add the eggs, one at a time, beating for 30 seconds after each addition.

At a low speed, add the flour mixture to the sugar mixture alternately with the buttermilk and vanilla. Scrap down the sides of the bowl as necessary. Add the food coloring mixture, until the batter is uniform in color.

In a small bowl, mix the baking powder and vinegar. It will foam up. Fold it into the batter, do not beat.

Pour batter into tins, and bake for 10-15 minutes. Wait 10 minutes before taking our of cupcake tin. Cool completely before frosting.
