For Breakfast: Bulls-Eye Waffles

What you need:

Steps
1. Thaw the waffles a bit by putting them in the microwave for about 30 seconds. They should be soft and spongy to the touch - pretty much unappetizing at this point.
2. Now, grab a glass with a small diameter of about one inch (I like to use the brandy snifter I have since I’m not old, rich or fancy enough to actually drink brandy out of it) and use the rim to ‘cookie-cut’ a circle from the center of the waffles. Now you have little baby waffles too!
3. Grab one egg and whisk it with a splash of milk and a dash of cinnamon. Splash and dash are such arbitrary amounts, but they sound cute so go with your gut.
4. Grease (lightning!) a medium sized pan with butter and on medium high heat. Put the waffles in the pan for about a minute or until the bottom is golden brown and then pour the whisked egg into the two holes evenly - one shouldn’t get more than the other that’s unfair. Let that cook for about 3 minutes and then flip it gently, or not gently if you have mad skill in that department.
5. Let it cook for about 2-3 minutes more and top with maple syrup, granola and your favorite fruit if you’re into that stuff!
BUT WAIT. There are still two lonely little baby waffles, right? I like to dip these in any leftover egg there is and make mini french toast waffle snacklets OR I throw them in the pan with butter before I cook the waffles and eat while I cook. There’s nothing better than eating while cooking.

For Lunch: Hearty Holey Sandwich

What you need:

Steps
1. Make two Egg In a Hole’s. You should know how to do this by now, but if not, hop on over to The Basics page and learn.
2. Once you’ve made the two Egg In a Hole’s make it a sandwich how you like it. My suggestion is to cut it in half and make use of that oozy yolk you must love if you’re on a website about Egg In a Hole.

For Dinner: Huevo in the Hole

What you need:

Steps
1. First, make some espacio (space) for the huevo by making a 2-inch hole in three of the tortillas (this will make one huevo in the hole)
2. Heat a pan to medium high heat and grease it generously with either butter or oil - or both if your arteries are feeling particularly hollow.
3. Once the pan is sizzling a wee bit, put the first layer of tortilla in the pan and top the tortilla ring with cheese. Repeat with the next tortilla so there should now be three layers of tortilla with two layers of cheese in between them.
4. Butter the center of the pan where the hole is a little bit more (so the egg won't stick) and then crack an egg in it. Let that cook for about 3-4 minutes and then flip it over CAREFULLY. Cook for about 2-3 more minutes.

For a Healthier Snack: prEGGo pepper

What you need:

Steps
1. Cut the pepper into a slice that is a closed ring - about an inch-thick. This is your hole.
2. Heat a pan to medium high heat and heat about a tablespoon of olive oil.
3. Put the pepper ring by itself in the pan for a few minutes. Then crack an egg right in the middle of the pepper and let it cook for about 4-5 minutes
4. Add a dash of salt, pepper, and paprika and once the bottom of the egg is completely opaque flip it over. Sprinkle the top with some cheddar cheese and let cook 2-3 more minutes. Serve with diced tomatoes on top.
